In the Kitchen #3 ~ European Omelette


Who says omelettes are just for breakfast? 


I love omelettes for lunch, dinner and breakfast ... its a quick and easy meal when you are pressed for time or just not feeling like cooking. And the filling options are limited only by your imagination and palate. This is one I came up with to use up some leftover broccoli and a small piece of chorizo.


Ingredients:
3 -  medium eggs 
1/4 C. chorizo
1/4 C. brie cheese
small broccoli crown
1-2 TBsp - butter (or coconut oil)
salt and pepper to taste

Optional:  1 Tsp - finely chopped garlic; 1-2 TBsp. finely diced onion




Create the Magic ...

Whisk eggs until well blended ... add salt and pepper if using ... whisk to blend in. Place rinsed and separate broccoli florets in skillet with a few drops of water cover and let steam over medium heat - about 3-4 minutes ...remove florets and set aside .. * you can spread 1TBsp (optional) of butter over steamed broccoli florets
Add 1 TBsp of butter to skillet and saute chorizo (garlic and onion if adding) until lightly browned;
pour eggs over chorizo and cook until cooked enough to flip.
Flip ... add broccoli florets and diced brie to half of omelette and fold over.  Turn off heat ..

TIPS: use leftover broccoli from a meal earlier in the week. layer filling: start with some brie , add florets and top with remaining brie - before folding over.




Remove from skillet ... as brie begins to melt





ENJOY !!!

    That's exactly what we are having for supper tonight! Not a copy of your version but we too use what we have, considering our health issues. There is a vegetarian chorizo at Trader Joe's that I love for just that or for adding to soups that serve like a meal. It is rather tough if you have to watch for low sodium, low cholesterol and as for me, lowering the protein intake. But we manage and we feel healthy!

    1. I'm re-learning to plan my weekly meals from one main dish in the week. Makes life a lot simpler and eating healthy more do able for me. The napkin ring is part of his and hers set ( madame , monsieur ). Wishing you both a wonderful week ahead ... and hoping your autumn is as warm as ours has been here in Toronto. xo

  4. Wow this looks delicious Cecilia! I love cooking up an omelette on days that I'm eating alone. Adding spinach and onion is usually my fav, but this I gotta try! I love broccoli & brie. Have a lovely Friday!
