Too often we are in a hurry darting from one thing to the next not taking time to really enjoy our meals. I'm hoping this post will inspire you to start making meal time a time to not only eat healthy but to also excite your eyes and taste buds. Here is my High Heeled Life Spinach Omelet recipe ... and a glimpse to into how I set my breakfast. (this is also great as a light lunch or dinner).
Ingredients:
2 eggs - (I like to use organic brown eggs)
1 TBsp. - of Coconut Milk ( you can use dairy milk or soy or almond)
2-3 handfuls of spinach (about 2 cups)
1 handful of shredded cheese
2-3 leaves of fresh basil
sea salt, oregano, ground pepper to taste
1/2 teaspoon of tumeric
1/2 TBsp. oil for cooking - I like to use a walnut or coconut oil
Heat oil in frying pan ... lower heat to medium add spinach. I like to add a little garlic powder (or chopped fresh garlic - when I have it) to oil. Sauté until spinach begins to wilt - you may wish to lower heat a little more.
As spinach is cooking ... add eggs, milk, sea salt, pepper, oregano, turmeric and basil in a bowl and whisk together.
Add egg mixture to spinach ...let it cook enough to get spatula under egg and flip it over. Let cook a few seconds and flip back. Add shredded cheese and roll omelet onto itself.
I refuse to give up bread ... but have been using baguette style bread instead of the white sandwich bread. I find it more enjoyable and you can get away with just a couple small slices. And since the slices are tiny I don't feel guilty using a little butter and rose jam.
Voila breakfast is served .... I added a few grapes to garnish my plate... it is an easy way to add fruit to my meal.
Of course food is meant to be enjoyed and not just plopped on a plate and devoured without much thought. Instead of just plopping the jam jar - I keep the jam in an elegant jam dish. Using a toast rack not only adds a touch of glam - but ensures you keep slices to a portion size ... A cloth napkin and napkin ring - make even the quickest meals a little more special. And even when I enjoy a cup of coffee I like to use a nice cup - this one brings back memories of my trip to Paris with my friend Elizabeth in 2011 - it was purchased in a little boutique in the Latin Quarter.

Yes you do have time .... this takes less time to prepare and enjoy than it does waiting in-line at a Starbuck's or Tim Horton's or most other fast food establishments during their morning rush.
