In the Kitchen #4 ~ Pot Roast Chicken

I have been enjoying my Le Creuset (French) Oven ... this recipe is from their website.
Pre-heat oven to 325 °F

Ingredients:

1 TBsp. Olive Oil
4 slices bacon , roughly chopped
2 cloves garlic
1 C. pearl onions, peeled and halved
6 sprigs thyme
2 bay leaves
2 stalks celery, roughly chopped
2 small carrots, roughly chopped
5 lb. chicken
salt and pepper
2 C. chicken stock 

Create the Magic:
Heat the oil over medium heat. Add the bacon, garlic and onions. Stir occasionally for 5-10 minutes or until onions have slightly softened. 
Add thyme, bay leaves, celery and carrots, continue to stir for another 2-4 minutes 
Add chicken, breast side up - and season with salt and pepper. Add chicken stock.
Cover the French Oven with lid and place in oven for 1 1/2 hours, basting occasionally
 with pan juices. 
Remove lid and increase temperature to  375 °F , cook for an additional 20 minutes.
Internal temperature should read 165 °F .

  1. Explain to me why I can make beef pot roast - and have for years - and never ONE time thought about doing a chicken pot roast?? What a great idea! I'm digging out my frozen chicken and making this right now! It looks yummy!!
