Grilled Chicken Breast, Salad and Pasta ~

One of the things I'll miss from summer ... eating from our garden.

Living in the country with 13 plus acres of land makes for a busy summer, especially if you want to benefit from all that Mother Nature offers. Here the Vegetable Gardener (otherwise know as Mr. G.), tends to the garden's daily needs. Tomatoes, lettuce, peppers, zucchini, egg plate, herbs,  are just some of the wonderful treats this garden provides.
 Today we are going to add some of the red leaf lettuce to our lunch plate.
The tomatoes are not quite ready, but are promising to be bountiful.

For our salad we will use market fresh tomatoes

We will be grilling portion size skinless and boneless chicken breasts (protein), seasoned with a drizzle of olive oil; sprinkling of paprika, turmeric, and Himalayan sea salt. 


Our garden fresh red leaf lettuce and market fresh tomatoes (vegetable) will be seasoned with a drizzle of olive oil, just a tap of Himalayan sea salt, pepper, Italian seasoning (without salt), and a drizzle of balsamic vinegar (you can substitute apple cider vinegar).

Our other side will be a vegetable infused whole grain pasta, cooked - drained and sprinkled with freshly grated Parmesan cheese.


To grill our chicken breast an indoor grill pan is used... to avoid adding additional oil.


Lunch is served...
(don't worry that the plate looks extra full ~ we use  small dinner plates. More in line to the size used in the 60's, to see the difference and how much the size of  dinner plates have  increased click here.)

    Lovely post! Love the way you described your vegetable gardener. Yesterday I had a German comment stating that no doubt we must have a gardener for keeping things looking the way they are. I replied to her, that's correct we do have a gardener. He is named husband Pieter and I'm his helper at times.
    I envy your red leaf lettuce; so lush and healthy looking! Your lunch is exactly the kind of meal we LOVE. I get the skinless and boneless chicken at Trader Joe's and did you know that they sell white Balsamico as well. You know, the red Balsamico can stain your clothes as it loves to splash a bit when working your plate. At least with the white one you are safe!
    Taste is the good from both the red and white.

  4. Yummy! so fresh, we usually grow tomatoes/new potatoes/peas each year, but did not this time and really missed them! elle x

  5. We are just going into Spring, I look forward to the warmth again.
    Someday , we hope, we will be gardening again, although something tells me I won't have a gardener like yours.

  6. Bonjour mon ami!! Your lunch looks delicious! I wish I had the space to garden... your red leaf lettuce is amazing. I especially love home grown tomatoes. Pair them with sliced cucumbers and a dash of sea salt, it's the perfect snack. How lucky you are to have your own gardener ;)

    isn't it the best, to be able to walk out into the yard and pick vegetables to eat minutes later? did that last night with the kale that went into shepperd's pie. tonight...tomatoes. gotta love a garden - nice post Celia.

  10. Yum, yum, yum! You always give me the best recipe ideas! Isn't it funny how simple can be so beautiful and delish? Alpha Hubby and I switched our plate sizes out a year or so ago, also - the "regular" plates were HUGE so our portion size was totally distorted.

  15. Yummy! That looks so good - I really shouldn't read this on an empty stomach! While I love fall, I will miss the fresh garden veggies, too. We don't have a garden, but a lady I work with does and she's always bringing in delicious tomatoes. Oh, well. Onto fall!
