Chocolate Mini Cakes ~that will have him saying...

"Yes, dear you can get the shoes!!!"

If you have a Chocolate Lover in the family, they will be puddy in your hands with this delicious creation.

Ingredients

2 cups boiling water
1 cup unsweetened cocoa powder
2 3/4 cups all-purpose flour
2 teaspoons baking soda
1/2 teaspoon baking powder
1/2 teaspoon salt 1 cup butter, softened
2 1/4 cups white sugar
4 eggs
1 1/2 teaspoons vanilla extract

Directions

Preheat oven to 350 degrees F (175 degrees C). Grease a 24 mini cake pans. In medium bowl, pour boiling water over cocoa, and whisk until smooth. Let mixture cool. Sift together flour, baking soda, baking powder and salt; set aside.

In a large bowl, cream butter and sugar together until light and fluffy. Beat in eggs one at time, then stir in vanilla. Add the flour mixture alternately with the cocoa mixture. Spread batter evenly between the 24 mini cake prepared pans.

Bake in preheated oven for 20 minutes. Allow to cool remove from pans. Add frosting.

For a triple delight - Grease 3 - 9 inch round cake pans and increase baking time to 25-30 minutes. (you may wish to double frosting recipe and frost between stacked cake layers as well as on the sides and top of cake). For  added touch of Autumn .. top mini cakes or triple cake with candied orange peel slivers.

  15. Sounds delicious! I wonder if I could use it to bribe my DIL to let my grandson have a sleepover this weekend... Since he is only 3 months old they are still feeling pretty possesive so they do not leave him for more than a few hours at a time. In about a year, they will be begging me to let him sleepover!
